
Sunday is a creative day, I just made Ayam Klaten. Ayam means chicken, Klaten is name of a city in Indonesia. So this recipe should be originally from Klaten. But please Klaten people, don’t be mad at me if the recipe is not exactly same as yours. 😀
This food is luxurious with many spices ( I used fresh spices). I used ayam kampung, the chickens that are raised using traditional free range production techniques. It’s very healthy definitely very delicious but of course little bit more expensive.

Ingredients
- 1 ayam kampung
- 2 tablespoon salt
- 3 tablespoon lemon juice
- 5 shallot cloves (bawang merah)
- 5 garlic cloves (bawang putih)
- 4 candlenuts (kemiri)
- 1 tablespoon coriander seeds (ketumbar)
- 1/2 tablespoon fennel seeds (adas)
- 1/2 tablespoon cumin (jinten)
- 2 star anise (bunga lawang)
- 2 cm ginger (jahe)
- 2 cm galangal (lengkuas)
- 1/2 tablespoon tamarin
- 2 tablespoon palm sugar
- 1 tablespoon salt
- 1 lemongrass stick (sereh)
- 3 salam leaves
- 2 tablespoons vegetable oil
- 2 cups coconut milk
- 2 cups water
Instructions
- Sprinkle the chicken with salt and lemon juice and sit it about 15 minutes
- Roast: coriander seeds, fennel seeds, cumin, star anise about 1 minutes until fragrance
- Mince: roasted spices, shallots, garlic, candlenuts, ginger, galangal
- Heat vegetable oil, add mince spices, lemongrass and salam leaves
- Add chicken
- Add coconut milk an water
- Add palm sugar, tamarin and salt
- Boil with medium heat about 30 minutes until chicken is tender
- Chicken will be beautifully brown, tender, juicy and delicious
